Wouldn't it be nice if your big Italian family supported you through your 60-day challenge and just gave up spaghetti Sundays altogether? Maybe we could start a Sunday salad night for the next 60 days? Needless to say my family isnt going to give up spaghetti dinner nights for this diet, but with all of us on a health kick, we did choose some healthy options.
The dinner was serving 12 people and almost half of us are on some sort of healthy regime. So my mom made two types of pastas. The regular of course, and then some protein ziti. I'm not going to lie to you and tell you it was just as good as the real deal. However, it wasn't bad! It was pretty good considering how healthy it was. We also had whole wheat bread rather then white Italian bread and a salad, which isnt ushually part of the dinner. We like to stick to the essentials: pasta, bread, sauce and meatballs!
Here is how Sunday went down:
Meal One: 2 Egg Whites Scrambled with Wheat Toast
Meal Two: Whole Wheat Toast with Peanut Butter
Meal Three: 1 Cup Protein Pasta with Marinara Sauce, 1 Slice of Whole Wheat Bread, 3 Meatballs, Small Slice of Cake (very small), Salad
Meal Four: Chocolate Milk
Now it was a long day, and I very well could have sat down and watched some TV with the family after dinner, but I knew I had to tell you that I didn't workout, and I only get one day off a week and you all know I took it Friday. So I got myself up and out the door and ran three miles about Winter Park. The first 1/2 mile was rough because I ate a lot more in one sitting than I had in a while, but after that the run felt really good. From a week of eating healthy and working out I cut my average run pace down by 30 seconds a mile without even trying.
Even if I didn't lose any weight during this challenge, I am really starting to feel a difference in my energy level and my body! I feel healthier.
