Walt Disney World Swan and Dolphin appoints new director of food and beverage

Greg Sherman will oversee the complex’s multi-million dollar food and beverage operation, which is comprised of 23 restaurants.

Walt Disney World's Swan and Dolphin has appointed a new director to oversee the complex's multi-million dollar food and beverage operation, which is comprised of 23 world-class restaurants. 

Greg Sherman will bring more than 25 years of food and beverage experience to the Swan and Dolphin, with previous roles including executive chef, general manager, regional general manager, and director of training and development.

His impressive background continued to expand when he joined Rosa Mexicano as a general manager in 2014. There, his leadership skills and deep understanding of the food and beverage industry propelled him to regional director of operations, vice president of operations and chief operating officer. 

As COO at Rosa Mexicano, Sherman was responsible for restaurant, beverage and culinary operations; private dining and sales; marketing; IT; finance; human resources; and training and development. 

His accomplishments included opening six new locations over a 16-month period, overseeing 12 Rosa Mexicano locations and six other concepts within the restaurant’s portfolio, managing an hourly team of more than 1,600 associates and 130 managers, and designing and implementing hospitality training programs.

Sherman received a Bachelor of Arts degree from Saint Anselm College and a master’s degree in education from the Lynch School of Education and Human Development at Boston College. 

His roots are deeply tied to the food and beverage world, as he follows the path of his restauranteur parents.

In a press release, Swan and Dolphin representatives said Sherman’s impressive background and commitment to delivering genuine hospitality, underscored by his deep people passion, perfectly aligns with the culture of the restaurant. 

“The food and beverage operation at the Walt Disney World Swan and Dolphin is very dynamic, requiring a very specialized skill set and personality,” Sean Verney, Swan and Dolphin area general manager, said “We are impressed with Greg’s diverse background and the successes he has achieved.
